The Project
Bespoke cake-makers Konditor & Cook commissioned a shop, café and specialist kitchen to be accommodated within a double-height ground floor space in Norman Foster’s ‘Gherkin’. The floor could not support a mezzanine and so the solution was to suspend a new kitchen level from the ceiling. This offered an airy, day-lit work environment for the skilled cake-makers—rare qualities for a commercial kitchen. Designed to work with the geometry of its context, the base of the mezzanine presents a striking, sculpted steel ceiling to the café level below.
